Gastronomy is the accumulation of knowledge in every aspect regarding human nourishment and welfare. With the concept of gastronomy culture which has attained a place in tourism sector as a result of food and beverage necessities of the humans, the importance attached on the gastronomic activities has increased and 'gastronomy' has become a focus of interest through gaining a role in tourism beyond being a science. Therefore, this concept which has become widespread all over the world from past to today, both has an effect upon tourism sector, and provides a direct development for food and beverage sector which is the most significant part of tourism. Human beings, in accordance with these developments, eat food for not only fulfilling their nutritional requirements; but also for tasting different flavors and for gaining experience by tasting the eye-pleasing flavors of regional cuisines when they travel to different places. The businesses need well-educated and experienced employees in their fields in order to produce more efficient services with higher quality in thriving and changing world economy. A more efficient service with higher quality in hotel management especially in culinary department can be measured with a successful education of the employed personnel. Increasing the number of schools where gastronomy education is given within an efficient education with good quality, improving the quality of education, and teaching the information with practices without remaining solely in theory will ensure the effectiveness of education. Both schools and the sector representatives undertake great responsibilities and tasks for the education given in this regard. School-sector collaboration should be ensured in order to enhance the applicability of the information learnt.The purpose of this study is to measure that in which level gastronomy education is given in Turkey, to what extent the information taught meet the expectations of the sector, and to what extent sector representatives are satisfied with the education given. As a result of this research, it has been found out that the education given is rather well in theoretical aspect. However, practical education is on medium-level. It has been concluded taht education level in secondary education is higher concerning therotical and pratical education. The lack of required infrastructure and experienced educators for practical education have resulted in practical education's insufficiency. A practice cuisine that keeps pace with the technological innovations and an experienced educator who gives practical education are required in order to apply practical education most effectively. Suggestions will be formed with the data obtained as a result of the survey and in line with the expectations of the sector representatives. This study consists of five parts. First part consists of research problem, research aim, and importance of the research, hypotheses, definitions and limitations. Second part is composed of six subtopics. The concept of 'gastronomy phenomena' in the first subtopic, 'historical development of gastronomy phenomena' in the second subtopic, 'current situation of the science of gastronomy' in the third subtopic, 'current situation of gastronomy education' in the fourth subtopic 'content analysis of the gastronomy education curriculum'; and 'national culinary occupational standards' in the sixth subtopic are discussed and the standards are put forward. In the third part, the model of the research, population and sample, gathering data and the evaluations concerning the analyses of the data are mentioned. In the fourth part, information about the findings and comments are provided. In conclusion, the results arising from the data obtained in accordance with the field research and suggestions accordingly are touched upon in the fifth part. Gastronomi, insan gıdası ve refahını ilgilendiren her konuda sağlanmış bilgi birikimidir. İnsanların yiyecek-içecek gereksinimleri sonucu turizm sektöründe yer edinmiş olan gastronomi kültürü kavramı ile beraber, dünyada gastronomik aktiviteler verilen önemde artmış ve 'gastronomi' bir bilim olmanın ötesinde turizmde yer alarak ilgi odağı haline gelmiştir. O nedenle dünden bugüne tüm dünyada yaygınlaşan bu kavram hem turizm sektörüne etki etmiş hem de turizm sektörünün en önemli parçası olan yeme- içme sektörüne doğrudan bir gelişim kazandırmıştır. İnsanoğlu bu gelişmeler doğrultusunda yemeği sadece karın doyurmak amacıyla değil, hem farklı tatlar almak ve göz zevkine hitap eden, gittikleri yerlerde o yörenin kendine has yemeklerini tadıp deneyim kazanmak için yemek yeme ihtiyacı duymuşlardır. Gelişen ve değişen dünya ekonomisinde işletmelerin daha kaliteli ve verimli hizmet üretebilmeleri için konusunda eğitimli ve deneyimli çalışanlara ihtiyaç duyulmaktadırlar. Otelcilikte özellikle mutfak bölümünde kaliteli ve verimli bir hizmet istihdam edilen personelin başarılı eğitimiyle ölçülebilir. Kaliteli ve verimli bir eğitim içinde gastronomi eğitimi verilen okulların arttırılması, verilen eğitim kalitesinin düzeltilmesi ve verilen eğitimin sadece teorikte kalmayıp öğretilen her bilginin uygulamayla öğretilmesi eğitimin etkinliğini sağlayacaktır. Bu konuda verilen eğitimde hem okullar hem de sektör temsilcileri büyük görev üstlenmektedir. Öğrenilen bilgilerin uygulanabilirliğini arttırmak için okul-sektör işbirliği sağlanmalıdır.Bu çalışmanın amacı; Ortaöğretim düzeyinde aşçılık eğitimi alan öğrenciler ile yükseköğretim düzeyinde aşçılık eğitimi alan öğrencilerin teorik ve pratik yeterlilik düzeylerinin karşılaştırılması esasına dayanmaktadır. Türkiye' de verilen aşçılık eğitimin ne seviyede olduğu ve öğretilen bilgilerin sektörün beklentileri ne derece karşıladığı, sektör temsilcilerinin verilen eğitimden ne derece memnun kaldığını ölçmeye yöneliktir. Yapılan araştırma sonucunda verilen eğitimin teorik açıdan oldukça iyi derecede olduğu tespit edilmiştir. Ancak pratik eğitim seviyesi orta düzeydedir. Teorik ve pratik eğitim konusunda ortaöğretim düzeyindeki eğitimin daha üst düzeyde olduğu sonucuna varılmıştır. Pratik eğitim için gerekli olan altyapı ve deneyimli eğitmen eksiği pratik eğitimin yetersiz olmasına neden olmuştur. Pratik eğitimin en etkili şekilde uygulanması için teknolojik yeniliklere ayak uyduran bir uygulama mutfağının eğitim görülen okul bünyesinde olması şart koşulmaktadır. Anket sonucunda elde edilen verilerle sektör temsilcilerinin de beklentileri doğrultusunda öneriler oluşturulacaktır.Bu çalışma 5 bölümden oluşmaktadır. Birinci bölümde araştırma problemi, araştırma amacı, önem, varsayım, tanımlar ve sınırlılıklardan oluşmaktadır. İkinci bölüm ise altı alt başlıktan oluşturulmuştur. Birinci alt başlıkta 'gastronomi olgusu' kavramı, ikinci alt başlıkta 'gastronomi olgusunun tarihsel gelişimi', üçüncü alt başlıkta 'gastronomi bilimin mevcut durumu, dördüncü alt başlıkta 'gastronomi eğitiminin mevcut durumu', beşinci alt başlıkta ise gastronomi eğitimi ders programlarının içerik analizi' ne yer verilmiştir. Altıncı alt başlıkta da ulusal aşçılık meslek standardına yer verilmiştir. Üçüncü bölümde araştırmanın modeli, evren ve örneklem, verilerin toplanması ve verilerin analizine ilişkin değerlendirmelerden bahşedilmiştir. Dördüncü bölümde bulgular ve yorum hakkında bilgi verilmiştir.. Son olarak beşinci bölümde ise yapılan alan araştırması doğrultusunda elde edilen verilerden ortaya çıkan sonuç ve bu doğrultuda önerilere yer verilmiştir.Anahtar kelimeler: Gastronomi, Gastronomi Bilimi, Eğitim, Sektör temsilcisi.
