Abstract

The somatic cell count(SCC), is the number of cells present in milk 'body' cells as distinguished from invading bacterial cells. It is generally accepted that herds with a cell count of 400.000 or less will have no significant production losses due to sub clinical enfection.The aim of this study was to determine the amount of bulk tank somatic cell counts (BTSCC). Some chemical and microbiological compositions of raw milk produced in the Marmara Region were also reached in order to evaluate the structure of milk produced. Fort his aim 75 raw milk samples were collected from three different cities of The Marmara Region (35 samples form Bursa, 30 samples from Balıkesir, 10 samples from Çanakkale).Average the fat value (%) with standard error are determined in Bursa, Balıkesir and Çanakkale provinces to be 3,81 ± 0,028, 3,63 ± 0,021, 3,59 ± 0,040 respectively. Non fat dry matter (%)8,49 ± 0,028, 8,39 ± 0,021, 8,30 ± 0,016 respectively, protein (%) 3,25 ± 0,015, 3,19 ± 0,022, 3,1 ± 0,019 respectively. Also BTSCC 586.645 SCC/ml (log 5,768 ± 0,040 SCC/ml), 654.481 SCC/ml (log 5,816 ± 0,033 SCC/ml), 670.481 SCC/ml (log 5,827 ± 0,025 SCC/ml) respectively and total bacteria 2.889.017 cfu/ml (log 6,461 ± 0,074 cfu/ml), 4.674.821 cfu/ml (log 6,670 ± 0,100 cfu/ml), 4.082.699 cfu/ml (log 6,611 ± 0,637 cfu/ml) respectively.

Somatik hücreler, sütte bulunan bakteriyel hücrelerden farklı olarak vücut hücrelerinin bir göstergesidir. Genel olarak subklinik enfeksiyonlardan dolayı önemli ölçüde süt verim kaybına neden olmayan 400.000 veya altındaki hücre sayısı sürüde kabul edilebilir.Bu çalışmada Marmara Bölgesinde üretilen çiğ sütlerin gıda güvenliğine ilişkin standartlara uygun biçimde üretilip üretilmediğinin ölçütü olan tank sütü somatik hücre sayısının (TSSHS) belirlenmesi amaçlanmış olup, ayrıca sütlerin bazı kimyasal özellikleri ve mikrobiyolojik özellikleri de incelenmiştir. Bu amaçla Marmara Bölgesinde bulunan Bursa, Balıkesir ve Çanakkale illerinden toplam 75 adet çiğ süt örneği alınmıştır (Bursa'dan 35, Balıkesir'den 30, Çanakkale'den 10).Yapılan analizler sonucunda elde edilen kimyasal özelliklere ait ortalama değerler; Bursa, Balıkesir ve Çanakkale illeri için sırasıyla (%) yağ değeri 3,81 ± 0,028, 3,63 ± 0,021, 3,59 ± 0,040; (%) ykm değeri 8,49 ± 0,028, 8,39 ± 0,021, 8,30 ± 0,016, (%) protein değeri 3,25 ± 0,015, 3,19 ± 0,022, 3,1 ± 0,019 olarak bulunmuştur. Tank sütü somatik hücre sayısı yine illere göre 586.645 adet/ml (log 5,768 ± 0,040 SHS/ml), 654.481 adet/ml (log 5,816 ± 0,033 SHS/ml), 670.481 adet/ml (log 5,827 ± 0,025 SHS/ml); toplam bakteri sayısı ise 2.889.017 adet/ml (log 6,461 ± 0,074 adet/ml), 4.674.821 adet/ml (log 6,670 ± 0,100 adet/ml), 4.082.699 adet/ml (log 6,611 ± 0,637 adet/ml) olarak bulunmuştur.
