Abstract:

This article presents an analytical study of the book "History of Moroccan Sugar through New Sources: From the Mediterranean to the Atlantic Ocean". It is a book that can be considered a continuation of the study of the sugar project in the long history after the study conducted by the archaeologist Paul Berthier. The book exposes the agricultural customs related to sugar cultivation in the Middle Ages, and devotes the largest space to the economic project carried out by the Saadians in the Modern Age, as a project that constituted the most important resources of the state treasury. It discusses also the social resonance of the project, then the historical phases that the sugar industry went through in relation to external marketing from the Iberian occupation to the death of Ahmed al-Mansur, and the book evaluates the strategy followed by the Saadians. It then turns to the fate of the project in the nineteenth century, when Morocco became the one importing sugar after it had been exporting it.
