Abstract:

The loaf of bread is an important basic food element for every individual in Arabia and the Middle East. For that reason, and I accordance with international standards, the governments were keen on making the price of bread accessible for all members of society with their various incomes and earnings. Makkah has a special place in the hearts of millions of Muslim pilgrims and visitors from all over the world who make it their destination every year. For this reason. It becomes necessary to handle the issue of bread according to modern scientific methods and procedures which aim at determining the factors affecting the bread industry in Makkah Al-Mukarramah and an analysis of the requirements of this industry and its availability in the Floly City. This process is particularly important in the light of the threat of competition coming from similar bread production factories in Jeddah whose products are provided easily through fast means of transportation. To achieve these objectives, a number of important questions were raised and answered through variables related to the bread industry some of which were related to natural requirements and some to the human resources requirements such as facilities, equipments, energy, raw materials, labor, transportation, etc. The variables also included knowledge of the geographical distribution of bakeries, the patterns resulting from such distribution, in addition to tracking the problems of the bakeries and the people working in them. The researcher used a field work sheet (card) consisting of more than 50 questions providing information on the location of the bakeries , the raw materials, and secondary materials used in the bread industry, energy, and bakery problems. A form about the workers (human resources) and their problems was also used. The study relied on a comprehensive inventory of the bakeries throughout the city, on the descriptive analytical statistical approach and quantitative methods for the analysis of data. Descriptive statistics were used to measure: central tendency, dispersion, correlation coefficients, analysis of factors. A cartographic style was also used, depending on the (Arcmap) program from the Geographic Information Systems ( GIS). The study reached a number of conclusions such as the following: 1)	The majority of modern bakeries are quite new and the number of old , long operating bakeries is very limited, 2)	The old bakeries are characterized by the availability of professional labor, good equipment, ranging from automatic to semi-automatic bakeries, 3)	The bread industry in Makkah Al-Mukarramah is currently having various problems, some of which are related to the product, and other with the human requirements. 4)	The categorization of bakeries does not follow criteria and controls which are appropriate to this industry 5)	The changes in the shape of the loaf of bread and the modern developments in the food systems may lead to the demise of this craft, which will have a negative impact on the Hajj and Umrah Seasons. The Study made the following recommendations: 1)	To make it obligatory for bakery owners or their representatives as well as other workers in this sector to attend courses (sessions) specialized in bakery development. 2)	to observe and maintain health (hygiene) conditions in this industry 3)	To provide information and knowledge about the dangers of some secondary materials which are harmful to the product like some of the embellishers or neutraceuticals. \.
