Abstract:

Andriake is an important port settlement of Myra, one of the cities of the Lycian Region, opening to the Mediterranean. The subject of this study is a group of Roman Period pans unearthed during the excavations in the port, in the Synagogue and Wine Workshops in 2009 and 2012. Pans, an indispensable part of ancient kitchens, are named wıth varıous names such as τάγηνον (tagenon), σείσων, sartago, sartagoris, sartagines, frixorium, frixorii, patina-patinae, patella-patellae, fretelae, bridum. The pans, which are preferred for cooking, frying, frying oil, and making sauces, have been used extensively since the Classical Period, when they gained their unique form. Thirty pan fragments recovered from Andriake were examined in two different types (Type 1 and Type 2). Type 1 pans dated back to the 1-3rd centuries AD were imported from Phokaia. It is possible to see these types of pans, which were widely used, in many ancient cities. The production place of Type 2 pans, which are dated back to the end of the 1st century AD and the middle of the 3rd century AD, is uncertain. However, it is thought that this type may have been produced in every city to meet local needs. The discovery of Phokaian pans in Andriake, shows that it imported ceramics from the production centers in the Western Anatolia Region through the port of the main city, Myra, between the 1-3rd centuries AD.
