Abstract:

In this study, based on the observations of the famous Ottoman traveler Evliya Çelebi b. 1611-d. 1685, the places where sugar cane was grown on the Anatolian and Mediterranean coasts, the desserts used in sugar, which was a luxury commodity, and the tradesmen related to sugar are discussed. The importance of sugar is due to the fact that it was an expensive product that had an impact on socio-economic life even before the 17th century. The role of sugar in cooking and social life is emphasised. In addition to the food and beverage culture, sugar, which was seen as a sign of social status and power, was also given as a gift. There are also references to sugar mills in Egypt in the 17th century. It has also been suggested that the history of sugar in Egypt dates back to before the A. D. 7th century. Indeed, this evaluation aims to contribute to the literature. A general framework of social life is drawn from the information on sugar. The data is evaluated by content analysis and supported by the literature. The data are evaluated by content analysis and supported by the literature.
